Recipe of The Week: Apple Pecan Spring Greens Salad with Cider Vinegar and Maple Syrup Salad Dressing

Salad Adapted from Fountain Avenue Kitchen

12 ounces mixed spring greens
1 Granny Smith apple, cored and thinly sliced
1/2 cup candied or spiced pecans (you may enjoy these)

1/3 cup blue cheese, crumbled
1/4 of a red onion, slivered
1/4 cup dried cranberries


In a large salad bowl, add the greens, sliced apple, pecans, blue cheese, red onion, and dried cranberries. Drizzle with a few tablespoons of the vinaigrette just before serving and toss well.


2-3 Tbsp medium -organic Maple Syrup1 pinch of salt
Pepper to taste
1/3 cup cider vinegar
Juice of Half a Lemon
1/4 cup extra virgin olive oil


Combine ingredients in a jar. Shake well and serve
