Earlier in the day, the weather turned cold, gray and windy — not a surprise for May in the Midwest. But by 7:00 pm, the sun was shining, the grills were hot and the guests were arriving in anticipation of our third Underground Supper Club, this one at the Apple Farm Community in Three Rivers.
It didn’t take much work to decorate the beautiful Round House, which feels like a grown up tree house with its nearly-360-degree view of the surrounding woods, including blooming lilacs and apple trees. We set tables for thirty and had a full dining room — full not just of people, but of conversation and laughter as old friends gathered, and new acquaintances began to share their stories with one another.
After blessing the meal with a poem, we enjoyed a three-course dinner that included:
- Buttermilk vichyssoise with watercress
- Homemade bread
- Grilled trout, caught in Lake Huron
- Spinach gnocchi
- Mushroom risotto
- Grilled asparagus
- Rhubarb tart
- Homemade mint ice cream
We were so grateful to celebrate spring with such lovely friends. And as if the food and company weren’t enough, donations toward the Huss Project for the evening have surpassed $1,800 so far! Thank you to all who made the dinner possible through donating, farming, fishing, decorating, cooking, serving and attending. We look forward to the next supper club on June 8 — just one week before our critical $50,000 deadline!
